The fastest way to cut food waste in a cafe or restaurant is stock rotation. Use the oldest stock first (FIFO, first in, first out), keep new stock at the back, and order based on what you really sell. A use-by date is about safety. Never serve food past it. A best-before date is about quality, and properly stored food is generally still safe after it.
